Founded in 1997 by Assaf Kedem, this boutique winery blends generations of tradition with forward-thinking winemaking to craft wines that reflect the volcanic soil, mountain climate, and deep-rooted passion of the Kedem family.

The winery is part of Kedem Wine Village, a one-of-a-kind destination offering:
A historic stone tasting room and culinary kitchen ("Didi’s Kitchen")

Every detail—from the design of the buildings to the warmth of the hospitality—has been shaped by the Kedem family, who remain fully involved in every aspect of the winery’s daily life.
The Kedem Family Legacy
Wine is a family affair at Assaf.
Assaf Kedem, the visionary founder, began his winemaking journey at age 50 after studying in Israel and training in South Africa.
Oren Kedem, his son and co-winemaker, honed his skills in California’s Sonoma Valley and France.
Together, they bring a unique blend of old-world techniques and modern innovation to every bottle.
Behind the scenes, the rest of the family is equally involved:
Hadassa (Assaf’s wife) leads group visits and guest relations
Adi (daughter and chef) runs Didi’s Kitchen
Karen manages the guest cabins and visitor center
Shahar oversees construction and branding
Tomer, the youngest, leads marketing efforts across central Israel
During harvest season, everyone returns to the vineyards, working side by side with friends and volunteers in an annual tradition that turns harvest into celebration.
Terroir & Vineyards
Assaf Winery farms 15 acres of estate vineyards, planted by Assaf himself in 1990. The Golan’s basalt-rich soil, high altitude (500–890 meters), and cool climate create ideal growing conditions for high-quality grapes.

Harvest Weekend: A Tradition of Togetherness
Each year, the Kedem family invites guests from near and far to join in the Friends’ Harvest Weekend—a hands-on grape harvest that begins at sunrise and ends with homemade breakfast and campfire dinners. It’s more than work; it’s a deeply communal celebration of the land, the wine, and the people who make it all possible.

Dry Red Wine. 75% Pinotage, 10% Cabernet Franc, 10% Cabernet Sauvignon, and 5% Shiraz
Rich in flavors, light and refreshing on the palate. Deep dark color, long and balanced acidity. Marries scents of ripe red fruit and a hint of roasted coffee, licorice, and dark chocolate.
